The 105 gun on the M4 sherman is killing Panzer IVs in one shot. (no ammo rack)

according to in game stats this is impossible. the 105(HE) does 410 damage and 53 pen. panzer IV front armor has 80/120mm armor so the total damage will be reduced a lot.
even though, the 460 HP PIV will die from a single direct hit from the 105 sherman.
gold ammo is not involved. it has only 350 damage.

If the shell penetrates it'll do full damage, +/- 25%. So, with a decently lucky roll on the damage charts, you'll oneshot a PzIv.

Where can I read that HE shells can do 25% more damage?

according to wiki:

Quote

High Explosive (HE) Shell

This shell has the highest damage value among all the shell types in the game, but also has a very low penetration value. It doesn't need to penetrate to damage the target, but it usually won't do as much damage as is stated on the gun specifications. If it manages to penetrate the armor, it will explode inside the tank and get full damage according to the specs, plus HE deals additional damage to multiple internal modules and/or crew which depend on how high the HE damage value is. HE shells on tanks have a very small splash-damage radius, but HE on SPG have a larger splash-damage radius.

So IF the 105 shell managed to hit some weak spot and penetrate it would have done full damage according to the specs. which is 410. not 410+25%

AFAIK the damage listed is an average, and when damage is calculated, they do between -25% to +25% damage.

Correct, the variance of the 105 as listed in the game is from 308 to 513 damage. See screenshot. My IS' 122mm has 390 average damage, but I tend to one shot PV4's regularly.
