It's kinda like one of my students walking around the hallways of our school with their report card glued to their chin. Personally, I do it to stroke my epeen make myself appear at least somewhat credible. Too many people on here really have no clue what they are talking about, so every bit of credibility you can give yourself helps, in my opinion. About the report-card analogy, if it was voluntary, just as forum signatures are, I think it wouldn't be a big deal. I would imagine that their classmates, at least, would have a good idea of what their academics were like regardless.
You are right that stat bullying is definitely a thing, but since service records can't be hidden anyway I don't see how the signature makes much of a difference. I expect that people put their stats in their signature to make them look better, so if anything they should end up being bullied less than without the signature.
If you're wondering, I'm not a reroll, believe it or not. I'm just one of those tryhards that analyze a game through and through even before playing it. I got a good start from sheer luck, I think, as I found SirFoch and Anfield very early on. Watching QB was fun, but once I started improving it really was the former two who helped me the most. To this day my playstyle still resembles Anfield's a lot, except I'm no good at it
