I wonder why on the alpha french tree the SAU 40 is classified as an AT SPG and not Tank Destroyer. Why not just make it a little clearer?

Probably because a lot of the time (In real life) Self Propelled Guns referred to both Self Propelled Artillery and Tank Destroyers, basically being Anti-Tank guns or artillery pieces mounted on a chassis, thus both are Self Propelled Guns.

But multi turret tech they're bringing in for the french tree..Would that turret be usable with say, a 37mm to ward off lights?

Yes, it would, after a few patches, that is. Multi-turret has been delayed and is now coming after French tanks.

Maybe not. Supposedly, the top 4.7cm gun on the B1bis has very high penetration.

Given how well tier 4 heavies are treated by the MM, something akin go the the 5cm gun would actually turn out reasonably well.
i want to derp low tiers with the 75mm!
